Spinach & Cheese Tortellini with Romesco Sauce

Recipe Description:

Try this traditional Romesco Sauce to treat your family to a wonderful Italian meal tonight. Let your food processor due the work for you and easy serve this complex recipe with ease. It may seem complicated. Perfect to pair with Spinach & Cheese Tortellini, this sauce is a creamy match for the tender pasta that gives a little kick of heat.


2 cloves
1/4 cup
sherry vinegar
1/8 cup
fresh parsley, packed tight
1 (15oz) jar
roasted red pepper, drained
1/4 cup
tomato puree
3/4 cup
blanched almonds, toasted
2 tsp
smoked paprika
1/2 tsp
cayenne pepper
1 cup
extra virgin olive oil
kosher salt and black pepper, to taste
1/2 cup
Parmesan cheese, grated

Recipe Instructions:

Cook the Spinach & Cheese Tortellini following the cooking instructions on package and drain well. Set aside and keep warm.
Pulse the next 8 ingredients in a food processor until very finely chopped.
Slowly add oil into food processor while running on low speed, combined until smooth.
Season to taste with salt and pepper.
Serve over cooked Spinach and Cheese Tortellini. Top with parmesan cheese and enjoy!

How To Cook - Step 1
1. Add pasta to 4 quarts of gently boiling water. Stir immediately.

2. Cook for 3 minutes (until internal temp reaches 165º F). If frozen, cook for 4 minutes.
