Three Cheese Tortellini with a Herb & Tomato Garlic Oil

Recipe Description:

Three Cheese Tortellini is perfectly paired with a subtle sauce of fresh herbs and grape tomatoes. In a simple recipe, ready under 10 minutes, you can serve dinner to your whole family easily. Special tip: perfect as a cold tortellini salad the next day too!


1/2 cup
extra virgin olive oil
4 cloves
garlic, minced
1 pint
grape tomatoes, washed and halved
1 tbsp
parsely (or preferred fresh herb), coarsely chopped
1/2 cup
Parmesan Cheese, grated fresh
salt & pepper to taste

Recipe Instructions:

Cook tortellini according to directions on package. Set aside and keep warm.
Add olive oil and tomatoes to large sauce pan set to medium heat, cook a few minutes to soften tomatoes.
Add garlic and parsley to pan and simmer for 30 seconds then turn off heat. Add salt & pepper to taste.
Add reserved tortellini to sauce then gently stir to coat.
Serve topped with parmesan, enjoy!

How To Cook - Step 1
1. Add pasta to 4 quarts of gently boiling water. Stir immediately.

2. Cook for 3 minutes (until internal temp reaches 165º F). If frozen, cook for 4 minutes.

3. Scoop pasta out of water and strain to avoid breaking. Coat with your favorite sauce and serve.

Serve with caution, as food will be hot. Refrigerate leftovers immediately.
